Mo Casten began her career with a Bachelor of Science in Human Food and Nutrition from The University of West Virginia. Initially viewing her degree as two separate disciplines-food and nutrition-she leaned heavily into the food side, earning an Associate’s Degree in Culinary Arts from Johnson & Wales University. Mo cooked professionally for a short period before managing a multimillion-dollar restaurant in downtown Chicago for nearly a decade.
Through her work in both the culinary and corporate worlds, Mo realized that the language of nutrition is best understood through food, and that everyday decisions about food choices are often shaped by the realities of daily life. This insight inspired her to pursue a Master of Science in Nutrition at Benedictine University.
Since 2015, Mo has been licensed in Illinois as a Registered Dietitian Nutritionist. With deep expertise in both food and nutrition, she is dedicated to helping others make meaningful connections between the two-bridging the gap between nutritional science and practical, real-world eating.
Her career in nutrition has been focused on fueling athletes and feeding families.
Mo has a firsthand appreciation for the nutritional demands and dietary needs of athletes at all levels. As a former Division 1 athlete herself, she has successfully completed a full-distance Ironman and, most recently, crossed the finish line of the Boston Marathon.
As a mother of two young children, Mo understands the challenges of planning and preparing meals for a family-and she’s here to help. Whether you’re looking to fuel your kid’s sport, their hectic schedules, or simply get them on track to a healthy start, Mo combines good food with good science to help them reach their goals.
