Listed as FODMAPs friendly, this homemade oven baked "french fry" is popular at the Hjelmgren house! Using the whole potato keeps the fiber high, but baking in the oven keeps the calories lower than traditional fries. Potatoes are also a great source of complex carbs, and potassium - perfect for your young athletes too!
Preheat oven to 425 degrees.
Wash potatoes. Cut into wedges.
Microwave potato wedges in a microwave safe bowl for 5 minutes.
Remove bowl from microwave. Drizzle potatoes with garlic infused olive oil. Sprinkle
salt and black pepper over potatoes. Toss to coat.
Spread potatoes in a single layer on a parchment lined baking sheet.
Bake for 25 minutes then flip the potatoes and bake for an additional 15-20 minutes or
until fork tender and lightly browned.
